the name “du’s doughs” refers to two things. firstly, my last name, “du”. secondly all the “doughs” (ie. mostly breads) i concoct.
what you’ll find here: approachable language, outsized enthusiasm for bread, baking recipes and tutorials, stories from my life, ways to use up old discard, bakeries that are worth a visit.
what you won’t find here: any meat. i’ve been a vegetarian since 2018!
– the baker –
i’m erica, a chinese american, minnesotan transplant currently living in brooklyn. i’m completely obsessed with baking, bread, and bread baking.
i’ve been baking for as long as i can remember. as a kid, i’d use all my family’s flour to whip up batches of cookies. as a slightly older kid, i went on to start my high school’s first ever baking club.
a love of gluten runs deep in my blood. my family is from shandong, china, a province known for its wheat based cuisine. i grew up watching and then helping my mom make mantou, huajuan, bing, and baozi. i eat other things besides bread too i suppose.
i hope to use this space as a continuation of my journey, to keep documenting, sharing, learning, and connecting with you. thank you for stopping by my little corner, and please don’t hesitate to reach out!
